Strawberry Rhubarb Pie
Mrs. Oswald used to supply us with rhubarb and Mom sweetened it with strawberries so the kids would eat it.
Ingredients
- 1 cup sugar
- 1/4 tsp. salt
- 1/4 tsp. nutmeg
- 2 Tbsp. quick-cooking tapioca
- 1/4 cup orange juice
- 3 cups cut rhubarb
- 1 recipe Plain Pastry
- 1 cup sliced strawberries
- 1 Tbsp. butter
Directions
- Combine sugar, salt, nutmeg, tapioca, orange juice, and rhubarb.
- Place in 9-inch pie pan lined with Plain Pastry.
- Top with strawberries and dot with butter.
- Arrange pastry cut in shape of daisies or weave crisscross strips to form a lattice.
- Bake at 450° for 10 minutes, then at 350° for 30 minutes.
