Strawberry Rhubarb Pie

Mrs. Oswald used to supply us with rhubarb and Mom sweetened it with strawberries so the kids would eat it.

Ingredients

  • 1 cup sugar
  • 1/4 tsp. salt
  • 1/4 tsp. nutmeg
  • 2 Tbsp. quick-cooking tapioca
  • 1/4 cup orange juice
  • 3 cups cut rhubarb
  • 1 recipe Plain Pastry
  • 1 cup sliced strawberries
  • 1 Tbsp. butter

Directions

  1. Combine sugar, salt, nutmeg, tapioca, orange juice, and rhubarb.
  2. Place in 9-inch pie pan lined with Plain Pastry.
  3. Top with strawberries and dot with butter.
  4. Arrange pastry cut in shape of daisies or weave crisscross strips to form a lattice.
  5. Bake at 450° for 10 minutes, then at 350° for 30 minutes.
