Spicy Creamy Tomato Sauce

Ingredients

  • 2 Tbsp olive oil
  • 1 large red onion, chopped
  • 1 clove garlic, crushed
  • 2 (14 oz) cans diced tomatoes
  • 1 tsp balsamic vinegar
  • 1 tsp white sugar
  • 1 Tbsp chopped fresh basil
  • 1 red chile pepper, seeded and minced
  • 1/4 tsp salt
  • 1/4 tsp ground black pepper
  • 2/3 cup mascarpone cheese

Directions

  1. Heat olive oil in a skillet over medium heat. Add onion and cook and stir until translucent and soft, about 5 minutes. Add the garlic and cook and stir for 1 more minute.
  2. Stir in tomatoes, balsamic vinegar, and sugar, and cook over medium heat for 10 minutes, stirring occasionally.
  3. Stir in the basil, red chile pepper, salt, and black pepper, and cook for 10 minutes more. Remove from heat, and stir in the mascarpone cheese.
