Orange-Cranberry Cookies

A church recipe from Ruth Gleason. If you make these for a party once, you will be asked to bring them back again and again.

Ingredients

  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 1 cup softened butter
  • 1 egg
  • 1 orange rind, grated
  • 2-3/4 cup flour
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 cup chopped pecans
  • 1 cup dried cranberries
  • 12 oz. butterscotch chips

Directions

  1. In a large bowl, stir together sugars and butter. Add egg and orange rind. Stir in flour, baking soda, and salt. Dough will be stiff.
  2. Stir in pecans, dried cranberries, and butterscotch chips.
  3. Drop by tablespoonfuls about 2 inches apart onto ungreased cookie sheets.
  4. Bake 10 minutes at 375°. Cool slightly. Remove from cookie sheet and cool completely.

Makes about 5 dozen
