Orange-Cranberry Cookies
A church recipe from Ruth Gleason. If you make these for a party once, you will be asked to bring them back again and again.
Ingredients
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1 cup softened butter
- 1 egg
- 1 orange rind, grated
- 2-3/4 cup flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 cup chopped pecans
- 1 cup dried cranberries
- 12 oz. butterscotch chips
Directions
- In a large bowl, stir together sugars and butter. Add egg and orange rind. Stir in flour, baking soda, and salt. Dough will be stiff.
- Stir in pecans, dried cranberries, and butterscotch chips.
- Drop by tablespoonfuls about 2 inches apart onto ungreased cookie sheets.
- Bake 10 minutes at 375°. Cool slightly. Remove from cookie sheet and cool completely.
Makes about 5 dozen
