Banana Muffins

Something to do if you still have more of those those mushy, ripe bananas.

Ingredients

  • 3 large bananas
  • 3/4 cup sugar
  • 1 egg
  • 1/3 cup melted shortening
  • 1-1/2 cup flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt

Directions

  1. Mash bananas.
  2. Add sugar, egg, and shortening and blend well.
  3. Sift flour, baking soda, baking powder, and salt. Add to wet ingredients and stir lightly.
  4. Place in well battered pans (or muffin cups), filling 2/3 full.
  5. Bake at 375° for 20 minutes.
