Banana Muffins
Something to do if you still have more of those those mushy, ripe bananas.
Ingredients
- 3 large bananas
- 3/4 cup sugar
- 1 egg
- 1/3 cup melted shortening
- 1-1/2 cup flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
Directions
- Mash bananas.
- Add sugar, egg, and shortening and blend well.
- Sift flour, baking soda, baking powder, and salt. Add to wet ingredients and stir lightly.
- Place in well battered pans (or muffin cups), filling 2/3 full.
- Bake at 375° for 20 minutes.
